Thanks for stopping by.  If you like Caribbean recipes and actually enjoy preparing them as I do, have I got some treats for you! 

                                                      

                                                           SEA BREEZE SALAD

 

1/2 lb.  Cabbage (shredded)                                         1Large cucumber diced

 

2 Pegs of Garlic creamed w/ ½                         1 Large tomato diced

a teaspoon of salt                                                         

2 Tablespoons of salad oil

½ Teaspoon of salt                                                      
                                                                                     Vinegar

2 oz. of raw salted codfish – diced

 

2 tablespoons of diced brown bread (toasted)               Speck of hot Jamaican pepper

 

Toss all vegetables and fish together, add salad oil and vinegar to taste while tossing.  Lastly, add the toasted diced brown bread (croutons).

To my recipe buddies across the internet:        

I enjoy sharing these exciting recipes.  And I know most of you enjoy trying them out based on the e-mails I receive from you.  I often get a lot of questions about parts of the process of preparing a dish, even though you  have the written recipe before you.    Believe me, I understand.  Just  because I get the recipe of a master chef, that  doesn't mean that I'll be able to produce his master piece.  There's no getting around it... seeing a preparation being done is a much more powerful medium for success than just a written recipe.

I got together with a Caribbean Chef who invited me into her kitchen.  I wasn't going to let this this once-in-a-life-time opportunity pass me by.  So ( with her permission) I showed up every day with a camcorder.  By the end of the week, she created, and I video taped a whopping twenty Caribbean dishes and drinks.  The recipes consisted of :

...Since I didn't know what the heck I was doing, I paid her to help me script the darn thing.  I also paid her a  small fortune to release the video rights to me.  What can I say?  I'm a lover of Caribbean preparations, and I've never seen a video like this anywhere.......ever!   So I thought it was worth it.

  I had a friend of mine, Darren Johnson,  who is a food  critic, reviewed the video.  He liked it a lot, but thought I was crazy for paying this Chef  $500.00 to help me with the scripting and recipes and $1,500.00 for her to release it to me.  He knows I'm not rich, and teased me saying, "no one could love Caribbean foods that much to pay $2000.00 for video footage and a script.  After making me feel like a fool, he reassured me that I was sitting on a gold mine.  He appraised the retail value of the video just at $110.00.  I was a little uncomfortable with that high a price, but he's the food critic, not I.  Darren  got it reviewed by the 'Library Journal' and it started to sell.  I was surprised that libraries all over the United States and Canada were paying my asking price.  What surprised me even more was the sales took off and only got better.  This was the mid. 90's , and to my amazement, here we are, in the new millennium,  I still haven't seen anything like this anywhere.  I have shared some of these recipes with you guys via email, like this one........

 

       Mango Delight

2 cups of ripe mango, fresh or canned

1 cup of water

1cup of orange juice

1tbsp. of lime juice

1/4 cup of sugar

1.  Add mango, orange juice, water and

     sugar into a blender.

2.  Cover and blend for a few seconds

3.  Chill and serve

......but based on some of the questions I get from time to time, it always comes back to the power of a visual medium.. "seeing is believing."  My friend, Darren, understanding my reluctance to offer my Caribbean cooking DVD to my friends across the internet  for $110.00, suggested the amount be $60.00.  I guess he understands the food business, but he can't relate to friends sharing recipes over the internet.  So I've decided to take his suggested amount of $60.00 and split it in half.  Yes, $29.99.  He warned me that a price that low will generate a presumption of limited value.  Well, I know you love Caribbean preparations like I do...... and I paid $2,000 for this information.  So I know it's worth more than $29.99.  Twenty Caribbean dishes & drinks on DVD?  Every step in the preparation shown?  I'm now making it available to you guys. I  know you'll agree with me that it's worth more than $29.99.  But just in case you disagree, simply return the DVD and I'll return your money. No questions asked.  Those of you who want to try out these twenty preparations right away, (via the written recipes) also have option to chose the written recipes (which will be  e-mailed to you) for only $5.00
